A simple and delicious recipe for sautéed zucchini and mushrooms in garlic butter, perfect as a side dish.
Ingredients
- 2 medium zucchinis, sliced into half-moons
- 8 ounces mushrooms, sliced
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, melt the butter over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
- Add the sliced mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until they are tender and browned.
- Stir in the sliced zucchini and dried thyme. Cook for an additional 5-6 minutes, or until the zucchini is tender but still slightly crisp.
- Season with salt and pepper to taste.
- Remove from heat and garnish with fresh parsley before serving.
Notes
- For added flavor, sprinkle some grated Parmesan cheese on top before serving.
- You can substitute the butter with olive oil for a healthier option or to make it dairy-free.
