Description

A simple and delicious recipe for sautéed zucchini and mushrooms in garlic butter, perfect as a side dish.

Ingredients

  • 2 medium zucchinis, sliced into half-moons
  • 8 ounces mushrooms, sliced
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, melt the butter over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
  3. Add the sliced mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until they are tender and browned.
  4. Stir in the sliced zucchini and dried thyme. Cook for an additional 5-6 minutes, or until the zucchini is tender but still slightly crisp.
  5. Season with salt and pepper to taste.
  6. Remove from heat and garnish with fresh parsley before serving.

Notes

  • For added flavor, sprinkle some grated Parmesan cheese on top before serving.
  • You can substitute the butter with olive oil for a healthier option or to make it dairy-free.
