Description

A delicious and easy homemade coconut cream pie that is perfect for any occasion.


Ingredients

  • 1 ½ cups sweetened shredded coconut
  • 1 ½ cups whole milk
  • 1 cup heavy cream
  • ¾ cup granulated sugar
  • ¼ cup cornstarch
  • ½ teaspoon salt
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsalted butter
  • 1 pre-baked 9-inch pie crust
  • Whipped cream for topping (optional)

Instructions

  1. Preheat your oven to 350°F. Spread the shredded coconut on a baking sheet and toast in the oven for about 5-7 minutes, or until golden brown. Keep an eye on it to prevent burning. Remove and set aside to cool.
  2. In a medium saucepan, combine the whole milk, heavy cream, sugar, cornstarch, and salt. Whisk together over medium heat until the mixture is smooth and begins to thicken, about 5-7 minutes.
  3. In a separate bowl, whisk the egg yolks. Gradually add about 1 cup of the hot milk mixture to the egg yolks, whisking constantly to temper the eggs.
  4. Pour the egg yolk mixture back into the saucepan with the remaining milk mixture. Continue to cook over medium heat, stirring constantly, until the mixture thickens and bubbles, about 2-3 minutes.
  5. Remove the saucepan from the heat and stir in the vanilla extract, butter, and half of the toasted coconut. Mix until well combined.
  6. Pour the coconut filling into the pre-baked pie crust, smoothing the top with a spatula. Cover with plastic wrap, pressing it directly onto the surface of the filling to prevent a skin from forming. Refrigerate for at least 4 hours, or until set.
  7. Once set, remove the pie from the refrigerator. Top with whipped cream and sprinkle the remaining toasted coconut on top before serving.

Notes

  • For a chocolate twist, add a layer of chocolate ganache to the bottom of the pie crust before pouring in the coconut filling.
  • Substitute the heavy cream with coconut cream for a richer coconut flavor.
