Description
A delicious and easy homemade coconut cream pie that is perfect for any occasion.
Ingredients
- 1 ½ cups sweetened shredded coconut
- 1 ½ cups whole milk
- 1 cup heavy cream
- ¾ cup granulated sugar
- ¼ cup cornstarch
- ½ teaspoon salt
- 4 large egg yolks
- 1 teaspoon vanilla extract
- 1 tablespoon unsalted butter
- 1 pre-baked 9-inch pie crust
- Whipped cream for topping (optional)
Instructions
- Preheat your oven to 350°F. Spread the shredded coconut on a baking sheet and toast in the oven for about 5-7 minutes, or until golden brown. Keep an eye on it to prevent burning. Remove and set aside to cool.
- In a medium saucepan, combine the whole milk, heavy cream, sugar, cornstarch, and salt. Whisk together over medium heat until the mixture is smooth and begins to thicken, about 5-7 minutes.
- In a separate bowl, whisk the egg yolks. Gradually add about 1 cup of the hot milk mixture to the egg yolks, whisking constantly to temper the eggs.
- Pour the egg yolk mixture back into the saucepan with the remaining milk mixture. Continue to cook over medium heat, stirring constantly, until the mixture thickens and bubbles, about 2-3 minutes.
- Remove the saucepan from the heat and stir in the vanilla extract, butter, and half of the toasted coconut. Mix until well combined.
- Pour the coconut filling into the pre-baked pie crust, smoothing the top with a spatula. Cover with plastic wrap, pressing it directly onto the surface of the filling to prevent a skin from forming. Refrigerate for at least 4 hours, or until set.
- Once set, remove the pie from the refrigerator. Top with whipped cream and sprinkle the remaining toasted coconut on top before serving.
Notes
- For a chocolate twist, add a layer of chocolate ganache to the bottom of the pie crust before pouring in the coconut filling.
- Substitute the heavy cream with coconut cream for a richer coconut flavor.
