A simple and delicious recipe for Easy Lentil Vegetable Patties that are perfect for a healthy meal.
Ingredients
- 1 cup dried green or brown lentils, rinsed and drained
- 2 ½ cups water
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 medium carrot, grated
- 1 medium zucchini, grated
- 1 cup breadcrumbs
- 2 large eggs
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons olive oil (for frying)
Instructions
- In a medium saucepan, combine lentils and water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until lentils are tender. Drain any excess water and let cool slightly.
- In a large mixing bowl, mash the cooked lentils with a fork or potato masher until mostly smooth, leaving some texture.
- Add the chopped onion, minced garlic, grated carrot, grated zucchini, breadcrumbs, eggs, cumin, paprika, salt, and black pepper to the bowl. Mix until well combined.
- Form the mixture into patties, about 2-3 inches in diameter. You should get around 10-12 patties.
- Heat olive oil in a large skillet over medium heat. Once hot, add the patties in batches, cooking for 4-5 minutes on each side or until golden brown and crispy.
- Remove from the skillet and place on a paper towel-lined plate to absorb excess oil. Serve warm.
Notes
- For a gluten-free option, substitute breadcrumbs with crushed gluten-free crackers or oats.
- Add chopped fresh herbs like parsley or cilantro for extra flavor, or mix in some feta cheese for a tangy twist.
