Description

Ingredients

  • 1 cup dried green or brown lentils, rinsed and drained
  • 2 ½ cups water
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, grated
  • 1 medium zucchini, grated
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil (for frying)

Instructions

  1. In a medium saucepan, combine lentils and water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until lentils are tender. Drain any excess water and let cool slightly.
  2. In a large mixing bowl, mash the cooked lentils with a fork or potato masher until mostly smooth, leaving some texture.
  3. Add the chopped onion, minced garlic, grated carrot, grated zucchini, breadcrumbs, eggs, cumin, paprika, salt, and black pepper to the bowl. Mix until well combined.
  4. Form the mixture into patties, about 2-3 inches in diameter. You should get around 10-12 patties.
  5. Heat olive oil in a large skillet over medium heat. Once hot, add the patties in batches, cooking for 4-5 minutes on each side or until golden brown and crispy.
  6. Remove from the skillet and place on a paper towel-lined plate to absorb excess oil. Serve warm.
