Description

Easy Low-Carb Reuben Bowls are a delicious and guilt-free twist on the classic Reuben sandwich, featuring ground beef, sauerkraut, and Swiss cheese, all topped with a creamy dressing.

Ingredients

  • 1 pound ground beef
  • 1 cup sauerkraut, drained
  • 1 cup shredded Swiss cheese
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula, about 5-7 minutes. Drain any excess fat.
  2. Stir in the sauerkraut, garlic powder, onion powder, salt, and pepper. Cook for an additional 3-4 minutes until heated through.
  3. In a small bowl, mix together the mayonnaise, Dijon mustard, apple cider vinegar, and a pinch of salt and pepper to create the dressing.
  4. Remove the skillet from heat and sprinkle the shredded Swiss cheese over the beef and sauerkraut mixture. Cover the skillet with a lid for 2-3 minutes to melt the cheese.
  5. Serve the mixture in bowls, drizzling the dressing on top. Garnish with chopped parsley if desired.

Notes

  • For a spicier kick, add a few dashes of hot sauce to the dressing or mix in some chopped jalapeños with the sauerkraut.
  • Substitute ground turkey or chicken for a leaner option, or use a plant-based ground meat alternative for a vegetarian version.
