Description
Easy Low-Carb Reuben Bowls are a delicious and guilt-free twist on the classic Reuben sandwich, featuring ground beef, sauerkraut, and Swiss cheese, all topped with a creamy dressing.
Ingredients
- 1 pound ground beef
- 1 cup sauerkraut, drained
- 1 cup shredded Swiss cheese
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions
- In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula, about 5-7 minutes. Drain any excess fat.
- Stir in the sauerkraut, garlic powder, onion powder, salt, and pepper. Cook for an additional 3-4 minutes until heated through.
- In a small bowl, mix together the mayonnaise, Dijon mustard, apple cider vinegar, and a pinch of salt and pepper to create the dressing.
- Remove the skillet from heat and sprinkle the shredded Swiss cheese over the beef and sauerkraut mixture. Cover the skillet with a lid for 2-3 minutes to melt the cheese.
- Serve the mixture in bowls, drizzling the dressing on top. Garnish with chopped parsley if desired.
Notes
- For a spicier kick, add a few dashes of hot sauce to the dressing or mix in some chopped jalapeños with the sauerkraut.
- Substitute ground turkey or chicken for a leaner option, or use a plant-based ground meat alternative for a vegetarian version.
