A delicious and easy-to-make marinated cheese appetizer featuring mozzarella and cheddar cheese, salami, and pickles, perfect for gatherings.
Ingredients
- 8 ounces of block mozzarella cheese, cut into cubes
- 8 ounces of block cheddar cheese, cut into cubes
- 4 ounces of sliced salami, cut into quarters
- 1 cup of assorted pickles (dill, sweet, or bread and butter), cut into bite-sized pieces
- 1/2 cup of olive oil
- 1/4 cup of red wine vinegar
- 2 cloves of garlic, minced
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- 1/2 teaspoon of crushed red pepper flakes (optional)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large bowl, combine the mozzarella and cheddar cheese cubes, salami, and pickles.
- In a separate bowl, whisk together the olive oil, red wine vinegar, minced garlic, oregano, basil, crushed red pepper flakes (if using), salt, and pepper.
- Pour the marinade over the cheese and salami mixture, making sure everything is well coated.
- Cover the bowl with plastic wrap or transfer the mixture to a jar with a lid. Refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.
- Before serving, give the mixture a gentle stir and garnish with chopped fresh parsley. Serve with toothpicks or on a platter.
Notes
- For a spicy kick, add sliced jalapeños or pepperoncini to the mix.
- Swap out the cheeses for your favorites, such as pepper jack or gouda, for a different flavor profile.
