Description

A delicious and easy-to-make marinated cheese appetizer featuring mozzarella and cheddar cheese, salami, and pickles, perfect for gatherings.


Ingredients

  • 8 ounces of block mozzarella cheese, cut into cubes
  • 8 ounces of block cheddar cheese, cut into cubes
  • 4 ounces of sliced salami, cut into quarters
  • 1 cup of assorted pickles (dill, sweet, or bread and butter), cut into bite-sized pieces
  • 1/2 cup of olive oil
  • 1/4 cup of red wine vinegar
  • 2 cloves of garlic, minced
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • 1/2 teaspoon of crushed red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, combine the mozzarella and cheddar cheese cubes, salami, and pickles.
  2. In a separate bowl, whisk together the olive oil, red wine vinegar, minced garlic, oregano, basil, crushed red pepper flakes (if using), salt, and pepper.
  3. Pour the marinade over the cheese and salami mixture, making sure everything is well coated.
  4. Cover the bowl with plastic wrap or transfer the mixture to a jar with a lid. Refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.
  5. Before serving, give the mixture a gentle stir and garnish with chopped fresh parsley. Serve with toothpicks or on a platter.
