Ingredients
- 2 (6-ounce) salmon fillets
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 lemon, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and halved
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper or lightly grease it with cooking spray.
- Place the salmon fillets on the prepared baking sheet, skin-side down.
- In a small bowl, mix together the olive oil, dried oregano, garlic powder, paprika, salt, and pepper.
- Brush the olive oil mixture evenly over the salmon fillets.
- Arrange the lemon slices, cherry tomatoes, and Kalamata olives around the salmon on the baking sheet.
- Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and is cooked through.
- Remove from the oven and garnish with fresh parsley before serving.
Notes
- For added flavor, marinate the salmon in the olive oil mixture for 30 minutes before baking.
