Description
A delightful and easy-to-make peach custard trifle bowl that layers fresh peaches, creamy custard, and ladyfinger cookies, topped with whipped cream.
Ingredients
- 2 cups fresh peaches, peeled and diced
- 1 tablespoon lemon juice
- 1 cup granulated sugar, divided
- 2 cups whole milk
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 cup heavy whipping cream
- 1 teaspoon powdered sugar
- 1 package (8 ounces) ladyfinger cookies
Instructions
- In a medium bowl, toss the diced peaches with lemon juice and 1/4 cup of granulated sugar. Set aside to macerate for about 15 minutes.
- In a saucepan over medium heat, combine the milk and remaining 3/4 cup of granulated sugar. Stir until the sugar dissolves and the mixture is warm, but not boiling.
- In a separate bowl, whisk together the eggs, cornstarch, and salt until smooth. Gradually add the warm milk mixture to the egg mixture, whisking continuously to temper the eggs.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly until it thickens and coats the back of a spoon, about 5-7 minutes. Remove from heat and stir in the vanilla extract. Let the custard cool to room temperature.
- In a large mixing bowl, whip the heavy cream with powdered sugar until soft peaks form.
- To assemble the trifle, layer half of the ladyfinger cookies at the bottom of a large glass bowl. Spoon half of the custard over the cookies, followed by half of the peaches. Repeat the layers with the remaining ladyfingers, custard, and peaches. Top with the whipped cream.
- Chill the trifle in the refrigerator for at least 2 hours before serving to allow the flavors to meld.
Notes
- For a twist, try using other fruits like strawberries or blueberries instead of peaches.
- You can also add a splash of almond extract to the custard for a nutty flavor.
