Description

These Easy Pumpkin Spice Protein Balls are a delicious and nutritious snack perfect for fall or any time of year.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup pumpkin puree
  • 1/2 cup nut butter (peanut, almond, or cashew)
  • 1/4 cup honey or maple syrup
  • 1/4 cup vanilla protein powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup mini chocolate chips (optional)

Instructions

  1. In a large mixing bowl, combine the rolled oats, pumpkin puree, nut butter, honey or maple syrup, protein powder, pumpkin pie spice, vanilla extract, and salt. Mix well until all ingredients are fully combined.
  2. If using, fold in the mini chocolate chips until evenly distributed.
  3. Once the mixture is well combined, use your hands to form small balls, about 1 inch in diameter.
  4. Place the protein balls on a baking sheet lined with parchment paper.
  5. Refrigerate the protein balls for at least 30 minutes to firm up.
  6. After chilling, transfer the protein balls to an airtight container and store in the refrigerator for up to one week.

Notes

  • For a nut-free version, substitute the nut butter with sunflower seed butter.
