Ingredients
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 medium onion, thinly sliced
- 4 cups green cabbage, shredded
- 2 cloves garlic, minced
- 1 teaspoon dried dill weed
- Salt and pepper to taste
- 1 tablespoon apple cider vinegar
- 1 tablespoon fresh dill, chopped (optional for garnish)
Instructions
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced onion and sauté for about 3-4 minutes until softened.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Stir in the shredded cabbage and dried dill. Cook for about 5-7 minutes, stirring occasionally, until the cabbage is tender.
- Return the cooked chicken to the skillet and add the apple cider vinegar. Stir to combine and heat through for another 2-3 minutes.
- Taste and adjust seasoning with more salt, pepper, or dill if desired.
- Serve hot, garnished with fresh dill if using.
Notes
- For added flavor, try marinating the chicken in lemon juice and herbs for 30 minutes before cooking.
- You can substitute the cabbage with kale or Swiss chard for a different texture and taste.
