A delicious and easy recipe for Slow Cooker Beef Manhattan, perfect for a hearty meal.
Ingredients
- 2 pounds beef chuck roast
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup beef broth
- 1 cup sliced mushrooms
- 1 medium onion, sliced
- 1 medium green bell pepper, sliced
- 1 tablespoon Worcestershire sauce
- 1 tablespoon cornstarch
- 2 tablespoons water
- 4 slices of bread (white or whole wheat)
- 1 cup mashed potatoes (prepared)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Season the beef chuck roast with salt, pepper, garlic powder, and onion powder. Sear the roast in the skillet for about 4-5 minutes on each side until browned. Remove from skillet and place in the slow cooker.
- In the slow cooker, add the beef broth, sliced mushrooms, onion, green bell pepper, and Worcestershire sauce over the beef.
- Cover and cook on low for 8 hours or high for 4 hours, until the beef is tender and easily shredded.
- Once cooked, remove the beef from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker and stir to combine with the vegetables and sauce.
- In a small bowl, mix the cornstarch and water until smooth. Stir this mixture into the slow cooker to thicken the sauce. Let it cook for an additional 30 minutes on high.
- To serve, place a slice of bread on a plate, top with a generous portion of the beef mixture, and add a scoop of mashed potatoes on the side. Garnish with chopped parsley.

- For a spicier kick, add a teaspoon of red pepper flakes to the slow cooker.
- Substitute the beef chuck roast with pork shoulder for a different flavor profile.
