Description

A delicious and easy recipe for spinach balls that are perfectly baked to a golden brown, making them a great appetizer or snack.

Ingredients

  • 2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup olive oil

Instructions

  1. Preheat the oven to 375°F. Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the chopped spinach, breadcrumbs, Parmesan cheese, onion, garlic, eggs, salt, black pepper, Italian seasoning, and red pepper flakes. Mix until all ingredients are well incorporated.
  3. Using your hands, form the mixture into small balls, about 1 inch in diameter. Place the spinach balls on the prepared baking sheet, spacing them about 2 inches apart.
  4. Drizzle the olive oil over the spinach balls to help them brown.
  5. Bake in the preheated oven for 20-25 minutes, or until golden brown and firm to the touch.
  6. Remove from the oven and let cool for a few minutes before serving.

Notes

  • For a creamier texture, add 1/4 cup of ricotta cheese to the mixture.
  • If you prefer a crunchier exterior, broil the spinach balls for an additional 2-3 minutes after baking.
