Ingredients
For the Strawberry Mousse
- 2 cups fresh strawberries, hulled and sliced
- 1 cup heavy whipping cream
- ½ cup powdered sugar
- 1 teaspoon unflavored gelatin powder
- 2 tablespoons cold water
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice

Instructions
1️⃣ Prepare the Strawberry Puree
- Blend strawberries, lemon juice, and ¼ cup of powdered sugar in a blender until smooth.
- Strain the puree through a fine-mesh sieve to remove seeds for a silky texture.
2️⃣ Bloom the Gelatin
- In a small bowl, mix cold water and gelatin. Let it sit for 5 minutes until it thickens.
- Heat gently in a small saucepan over low heat until completely dissolved.
3️⃣ Combine the Strawberry Mixture
- Stir the dissolved gelatin into the strawberry puree and mix well.
4️⃣ Whip the Heavy Cream
- In a large mixing bowl, whip heavy cream, vanilla extract, and the remaining powdered sugar until soft peaks form.
5️⃣ Fold Everything Together
- Gently fold the strawberry mixture into the whipped cream, making sure not to deflate the airiness.
6️⃣ Chill & Set
- Spoon the mousse into serving glasses or ramekins.
- Refrigerate for at least 2 hours to allow the mousse to set properly.
