Ingredients
- 2 medium sweet potatoes, peeled and diced (about 2 cups)
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 6 large eggs
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onions (optional)
- 1/2 teaspoon paprika (optional)
Instructions
- Preheat your oven to 400°F. Grease a 9×13-inch baking dish.
- In a large bowl, toss the diced sweet potatoes with olive oil, salt, pepper, garlic powder, and onion powder until evenly coated. Spread the sweet potatoes in a single layer in the prepared baking dish.
- Roast the sweet potatoes in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized. Remove from the oven and let cool for a few minutes.
- In a separate bowl, whisk together the eggs and milk until well combined. Stir in the shredded cheddar cheese and green onions, if using.
- Pour the egg mixture over the roasted sweet potatoes in the baking dish. Sprinkle with paprika, if desired.
- Return the casserole to the oven and bake for an additional 25-30 minutes, or until the eggs are set and the top is lightly golden. Let cool for a few minutes before slicing.
Notes
- For added flavor, consider mixing in cooked sausage or bacon before adding the egg mixture.
- You can also substitute the cheddar cheese with feta or goat cheese for a different taste.
