Ingredients

  • 2 medium sweet potatoes, peeled and diced (about 2 cups)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 6 large eggs
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions (optional)
  • 1/2 teaspoon paprika (optional)

Instructions

  1. Preheat your oven to 400°F. Grease a 9×13-inch baking dish.
  2. In a large bowl, toss the diced sweet potatoes with olive oil, salt, pepper, garlic powder, and onion powder until evenly coated. Spread the sweet potatoes in a single layer in the prepared baking dish.
  3. Roast the sweet potatoes in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized. Remove from the oven and let cool for a few minutes.
  4. In a separate bowl, whisk together the eggs and milk until well combined. Stir in the shredded cheddar cheese and green onions, if using.
