Description

A healthy and delicious twist on traditional egg rolls, served in a bowl with ground pork and fresh vegetables.

Ingredients

  • 1 pound ground pork (or ground turkey)
  • 1 tablespoon sesame oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 cups coleslaw mix (shredded cabbage and carrots)
  • 3 tablespoons soy sauce (or coconut aminos for a gluten-free option)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha (optional, for heat)
  • 2 green onions, sliced
  • Sesame seeds for garnish

Instructions

  1. In a large skillet, heat the sesame oil over medium heat. Add the ground pork and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  2. Add the diced onion, minced garlic, and grated ginger to the skillet. Sauté for another 3-4 minutes until the onion is translucent and fragrant.
  3. Stir in the coleslaw mix, soy sauce, rice vinegar, and sriracha (if using). Cook for an additional 5-7 minutes, stirring occasionally, until the cabbage is tender.
  4. Remove from heat and stir in the sliced green onions.
  5. Serve hot, garnished with sesame seeds.

Notes

  • For a vegetarian option, substitute the ground pork with crumbled tempeh or tofu.
  • Add additional vegetables such as bell peppers, snap peas, or mushrooms for extra flavor and nutrition.
