Description
Eggplant Napoleon is a delicious layered dish made with breaded and fried eggplant slices, marinara sauce, ricotta, mozzarella, and Parmesan cheese, garnished with fresh basil.
Ingredients
- 2 medium eggplants, sliced into 1/4-inch rounds
- 1 teaspoon salt
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1 cup marinara sauce
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil leaves for garnish
Instructions
- Preheat the oven to 375°F.
- Sprinkle the eggplant slices with salt and let them sit for 30 minutes to draw out moisture. Rinse and pat dry with paper towels.
- Set up a breading station: Place the flour in one shallow dish, the beaten eggs in another, and mix the breadcrumbs, Italian seasoning, garlic powder, and black pepper in a third dish.
- Dredge each eggplant slice in flour, dip it in the beaten eggs, and then coat it with the breadcrumb mixture.
- In a large skillet, heat 1/4 cup of olive oil over medium heat. Fry the breaded eggplant slices in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.
- In a 9×13-inch baking dish, spread a thin layer of marinara sauce on the bottom. Layer half of the fried eggplant slices, half of the ricotta cheese, half of the marinara sauce, and half of the mozzarella cheese. Repeat the layers with the remaining ingredients, finishing with the mozzarella and Parmesan on top.
- Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
- Let the Eggplant Napoleon cool for 10 minutes before slicing. Garnish with fresh basil leaves before serving.
Notes
- For a lighter version, grill the eggplant slices instead of frying them.
- For added flavor, mix some chopped spinach or herbs into the ricotta cheese.
