Ingredients
- 8 large eggs
- 1 cup heavy cream
- 1 cup milk
- 1 cup cooked and crumbled Canadian bacon
- 1 cup shredded Swiss cheese
- 1/2 cup chopped fresh spinach
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pre-made 9-inch pie crust
- For the Hollandaise Sauce:
- 3 large egg yolks
- 1 tablespoon lemon juice
- 1/2 cup unsalted butter, melted
- 1/4 teaspoon cayenne pepper (optional)
- Salt to taste
Instructions
- Preheat the oven to 375°F.
- In a large mixing bowl, whisk together the eggs, heavy cream, milk, salt, and pepper until well combined.
- Stir in the cooked Canadian bacon, shredded Swiss cheese, and chopped spinach. Mix until evenly distributed.
- Pour the egg mixture into the pre-made pie crust, spreading it evenly.
- Bake in the preheated oven for 35-40 minutes, or until the quiche is set and lightly golden on top. Let it cool for 10 minutes before slicing.
- For the Hollandaise Sauce: In a heatproof bowl, whisk together the egg yolks and lemon juice until pale and frothy.
- Place the bowl over a pot of simmering water (double boiler method) and continue whisking until the mixture thickens slightly.
- Gradually drizzle in the melted butter while whisking continuously until the sauce is smooth and creamy.
- Stir in cayenne pepper and salt to taste.
- Serve slices of the quiche warm, drizzled with Hollandaise sauce.
