  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pre-made 9-inch pie crust
  • For the Hollandaise Sauce:
  • 3 large egg yolks
  • 1 tablespoon lemon juice
  • 1/2 cup unsalted butter, melted
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt to taste

Instructions

  1. Preheat the oven to 375°F.
  2. In a large mixing bowl, whisk together the eggs, heavy cream, milk, salt, and pepper until well combined.
  3. Stir in the cooked Canadian bacon, shredded Swiss cheese, and chopped spinach. Mix until evenly distributed.
  4. Pour the egg mixture into the pre-made pie crust, spreading it evenly.
  5. Bake in the preheated oven for 35-40 minutes, or until the quiche is set and lightly golden on top. Let it cool for 10 minutes before slicing.
  6. For the Hollandaise Sauce: In a heatproof bowl, whisk together the egg yolks and lemon juice until pale and frothy.
  7. Place the bowl over a pot of simmering water (double boiler method) and continue whisking until the mixture thickens slightly.
  8. Gradually drizzle in the melted butter while whisking continuously until the sauce is smooth and creamy.
