Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 cup fresh raspberries
- ½ cup shelled pistachios, chopped
- ¼ cup raspberry jam
Instructions
- Preheat your oven to 325°F.
- In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
- Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
- Gradually add the powdered sugar and vanilla extract, mixing until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Spread half of the cheesecake mixture over the cooled crust.
- Drop spoonfuls of raspberry jam over the cheesecake layer and swirl gently with a knife.
- Add the remaining cheesecake mixture on top and smooth the surface.
- Scatter fresh raspberries and chopped pistachios over the top.
- Cover the springform pan with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
- Before serving, garnish with additional raspberries and pistachios if desired.
