Ingredients
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 medium green bell pepper, chopped
- 2 medium carrots, sliced
- 2 celery stalks, chopped
- 1 small head of cabbage, chopped (about 4 cups)
- 1 can (14.5 ounces) diced tomatoes, undrained
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 tablespoon apple cider vinegar
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.
- Add the bell pepper, carrots, and celery to the pot. Cook for another 5 minutes, stirring occasionally.
- Stir in the chopped cabbage, diced tomatoes (with juice), vegetable broth, thyme, basil, salt, black pepper, and red pepper flakes (if using). Bring the mixture to a boil.
- Reduce heat to low and let the soup simmer for about 30 minutes, or until the vegetables are tender.
- Stir in the apple cider vinegar and cook for an additional 5 minutes.
- Taste and adjust seasoning if necessary before serving.
Notes
- For added flavor, consider adding a splash of hot sauce or a squeeze of lemon juice before serving.
- You can also blend a portion of the soup for a creamier texture while keeping some chunks for added heartiness.
