Ingredients

  • 2 cups cooked brown rice
  • 1 lb boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 avocado, diced
  • 1 cup shredded cheddar cheese
  • 1 lime, juiced
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Cook the brown rice according to package instructions. Set aside once done.
  2. In a large bowl, combine olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Add the chicken breasts and coat them evenly with the spice mixture.
  3. Heat a skillet over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from heat and let rest for a few minutes before slicing.
  4. In a large bowl, combine the cooked brown rice, black beans, corn, diced tomatoes, and lime juice. Mix well to combine.
  5. To assemble the bowls, divide the rice mixture among four bowls. Top each with sliced chicken, diced avocado, and shredded cheddar cheese. Garnish with fresh cilantro.
  6. Serve immediately or store in airtight containers in the refrigerator for meal prep.
