Fiesta Chicken Rice Bowls are a flavorful and nutritious meal option featuring seasoned chicken, brown rice, black beans, corn, and fresh toppings.
Ingredients
- 2 cups cooked brown rice
- 1 lb boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 1 cup diced tomatoes (fresh or canned)
- 1 avocado, diced
- 1 cup shredded cheddar cheese
- 1 lime, juiced
- Fresh cilantro, chopped (for garnish)
Instructions
- Cook the brown rice according to package instructions. Set aside once done.
- In a large bowl, combine olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Add the chicken breasts and coat them evenly with the spice mixture.
- Heat a skillet over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from heat and let rest for a few minutes before slicing.
- In a large bowl, combine the cooked brown rice, black beans, corn, diced tomatoes, and lime juice. Mix well to combine.
- To assemble the bowls, divide the rice mixture among four bowls. Top each with sliced chicken, diced avocado, and shredded cheddar cheese. Garnish with fresh cilantro.
- Serve immediately or store in airtight containers in the refrigerator for meal prep.
Notes
- For a spicier kick, add diced jalapeños or a dash of hot sauce to the rice mixture.
- Substitute quinoa for brown rice for a different grain option that adds extra protein.
