Description

Firecracker Chicken Stir Fry is a spicy and flavorful dish featuring tender chicken and vibrant vegetables, all coated in a delicious sauce.

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1/4 cup soy sauce
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the garlic and ginger, and sauté for about 30 seconds until fragrant. Add the red and yellow bell peppers, broccoli, and snap peas. Stir-fry the vegetables for about 3-4 minutes until they are tender-crisp.
  3. In a small bowl, whisk together the soy sauce, sweet chili sauce, sriracha, rice vinegar, cornstarch, and water until smooth. Pour the sauce over the vegetables in the skillet and stir to combine.
  4. Return the cooked chicken to the skillet and toss everything together until the chicken is coated in the sauce and heated through, about 2-3 minutes.
  5. Serve hot, garnished with sliced green onions and sesame seeds.

Notes

  • For a milder version, reduce the amount of sriracha or omit it entirely.
  • You can substitute the chicken with tofu or shrimp for a different protein option.
  • Consider marinating the chicken in soy sauce and ginger for 30 minutes before cooking for added flavor.
