Description

A delicious and hearty meatloaf packed with flavor, topped with a rich tomato sauce.


Ingredients

  • 1 ½ lbs ground beef (or a mix of beef & pork)
  • 1 small onion, finely diced
  • 3 garlic cloves, minced
  • 1 cup breadcrumbs (panko or regular)
  • ½ cup milk
  • 2 large eggs
  • 2 tbsp Worcestershire sauce
  • 2 tbsp ketchup
  • 1 tbsp Dijon mustard
  • ½ cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 can (15 oz) crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tbsp balsamic vinegar (or red wine vinegar)
  • 1 tsp sugar (to balance acidity)
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • Red pepper flakes (optional, for heat)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, combine breadcrumbs and milk. Let soak for 5 minutes.
  3. Add ground meat, onion, garlic, eggs, Worcestershire sauce, ketchup, mustard, Parmesan, parsley, paprika, oregano, salt, and pepper. Mix gently until just combined (don’t overmix).
  4. Form mixture into a loaf shape and place on a parchment-lined baking sheet or loaf pan.
  5. Bake uncovered for 45 minutes.
  6. In a saucepan, heat olive oil. Sauté onion until soft, then add garlic.
  7. Stir in tomato paste, cook 1–2 minutes.
  8. Add crushed tomatoes, vinegar, sugar, basil, oregano, salt, and pepper. Simmer 15–20 minutes until thickened.
  9. After 45 minutes of baking, remove meatloaf and spoon some tomato sauce over the top.
  10. Return to oven and bake another 15 minutes, until cooked through (internal temp 160°F / 70°C).
  11. Let rest 10 minutes before slicing. Serve with extra rich tomato sauce spooned over each slice.

Notes

  • For a spicier version, add red pepper flakes to the meatloaf mixture.
  • Let the meatloaf rest before slicing to maintain its juiciness.
