Ingredients

  • 2 large sweet potatoes (about 1 pound each)
  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup chopped pecans (optional)
  • 1/4 cup mini marshmallows (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly and pierce them several times with a fork.
  3. Place the sweet potatoes on a baking sheet lined with foil or parchment paper. Bake for 45-60 minutes, or until they are tender and easily pierced with a fork.
