Description

This Fluffy Cottage Cheese Cloud Bread is a light, airy, and delicious low-carb alternative to traditional bread. With its soft texture and mild flavor, it’s perfect for sandwiches, snacks, or enjoying on its own. Made with simple ingredients, this gluten-free and protein-packed treat is as nutritious as it is delightful!

Ingredients

Gather Your Magic Ingredients:

  • 3 large eggs, separated
  • ½ cup cottage cheese, blended until smooth
  • ¼ teaspoon cream of tartar
  • ½ teaspoon salt
  • 1 tablespoon cornstarch or arrowroot powder (optional, for better structure)
  • 1 teaspoon honey or a pinch of sweetener (optional, for a touch of sweetness)

Instructions

  1. Preheat & Prepare – Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper. Separate the egg whites and yolks into two bowls.
  2. Whip the Egg Whites – Add cream of tartar to the egg whites and beat with a hand mixer or stand mixer on high speed until stiff peaks form.
  3. Mix the Base – In the yolk bowl, mix in the blended cottage cheese, salt, cornstarch (if using), and honey or sweetener (if using). Stir until smooth.
  4. Fold Gently – Carefully fold the whipped egg whites into the yolk mixture in thirds, using a spatula to retain as much air as possible for a fluffy texture.
  5. Shape & Form – Scoop the mixture onto the lined baking sheet, forming 6–8 small rounds or larger pieces. Shape evenly with the back of a spoon.
  6. Bake to Perfection – Bake for 25–30 minutes, or until golden brown and set. Allow to cool completely before serving.

Notes

  • For Extra Fluffiness – Use room-temperature eggs for better volume.
  • Keep it LightFold gently to maintain airiness in the batter.
  • Bake Immediately – Mix and shape quickly to avoid deflation.
  • Add Flavor – Try adding herbs, garlic powder, or a sprinkle of cheese for a savory twist.
