Ingredients

  • 2 (14.75-ounce) cans of pink salmon, drained and flaked
  • 1 cup mashed potatoes (about 2 medium potatoes)
  • 1 cup chopped onion
  • 1 cup frozen peas, thawed
  • 1/2 cup milk
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried dill
  • 1 pre-made pie crust (9-inch)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 375°F.
  2. In a large mixing bowl, combine the flaked salmon, mashed potatoes, chopped onion, and thawed peas.
  3. In a separate bowl, whisk together the milk, mayonnaise, Dijon mustard, lemon juice, salt, black pepper, and dill until smooth.
  4. Pour the milk mixture over the salmon mixture and stir until well combined.
  5. Pour the filling into the pie crust, spreading it evenly.
  6. Cover with the second pie crust, sealing the edges by crimping with a fork. Cut a few slits in the top crust to allow steam to escape.
  7. Brush the top crust with the beaten egg for a golden finish.
  8. Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown.
  9. Let the pie cool for about 10 minutes before slicing and serving.

  • For a creamier filling, add 1/4 cup of sour cream to the mixture.
