Ingredients
- 2 large carrots, peeled and grated
- 1 red bell pepper, thinly sliced
- 1 cup red cabbage, shredded
- 1/4 cup fresh cilantro, chopped
- 1/4 cup green onions, sliced
- 1/4 cup unsalted peanuts, chopped
- 3 tablespoons lime juice
- 2 tablespoons fish sauce
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 1 teaspoon minced garlic
- 1/2 teaspoon red pepper flakes (adjust to taste)
Instructions
- In a large bowl, combine the grated carrots, sliced red bell pepper, shredded red cabbage, chopped cilantro, sliced green onions, and chopped peanuts. Toss gently to mix the vegetables and herbs evenly.
- In a separate small bowl, whisk together the lime juice, fish sauce, honey, sesame oil, minced garlic, and red pepper flakes until well combined.
- Pour the dressing over the salad mixture and toss until all the ingredients are coated evenly.
- Let the salad sit for about 10-15 minutes to allow the flavors to meld.
- Serve chilled or at room temperature, garnished with additional peanuts and cilantro if desired.
