Ingredients

  • 2 tablespoons olive oil
  • 4 slices bacon, chopped
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 small head green cabbage, chopped (about 4 cups)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon apple cider vinegar

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped bacon and cook until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and set aside, leaving the drippings in the skillet.
  3. Add the sliced onion to the skillet and sauté for about 3-4 minutes until softened.
  4. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  5. Add the chopped cabbage to the skillet, along with the salt, black pepper, and red pepper flakes if using. Stir well to combine and cook for about 10-15 minutes, stirring occasionally, until the cabbage is tender and slightly caramelized.
  6. Return the cooked bacon to the skillet and drizzle with apple cider vinegar. Stir to combine and cook for another 2 minutes.
  7. Serve hot as a side dish or main course.
