Ingredients
- 2 large russet potatoes, peeled and diced (about 4 cups)
- 1 medium onion, sliced
- 12 ounces smoked Polish sausage, sliced into rounds
- 3 tablespoons vegetable oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish, optional)
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the diced potatoes to the skillet and season with salt, pepper, garlic powder, and paprika. Stir to coat the potatoes evenly.
- Cook the potatoes for about 10 minutes, stirring occasionally, until they start to soften and turn golden brown.
- Add the sliced onions and smoked Polish sausage to the skillet. Stir well to combine.
- Continue cooking for another 10-15 minutes, stirring occasionally, until the potatoes are tender and the sausage is heated through.
- Taste and adjust seasoning if necessary. Remove from heat and garnish with fresh parsley if desired.
Notes
- For extra flavor, add bell peppers or mushrooms when cooking the onions and sausage.
- For a healthier version, use turkey sausage and substitute half of the potatoes with cauliflower.
