A delicious and healthy treat made with Greek yogurt, mixed berries, and nuts, perfect for a refreshing snack.
Ingredients
- 2 cups plain Greek yogurt
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1/2 cup chopped nuts (almonds, walnuts, or pecans)
- 1/4 cup shredded coconut (optional)
Instructions
- In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until well blended and smooth.
- Line a baking sheet with parchment paper. Pour the yogurt mixture onto the prepared baking sheet and spread it evenly to about 1/2 inch thick.
- Sprinkle the mixed berries, chopped nuts, and shredded coconut (if using) evenly over the yogurt layer. Press the toppings gently into the yogurt to ensure they stick.
- Place the baking sheet in the freezer and freeze for at least 4 hours or until the yogurt is completely solid.
- Once frozen, remove the yogurt bark from the baking sheet and break it into pieces. Serve immediately or store in an airtight container in the freezer.
Notes
- For a chocolate twist, drizzle melted dark chocolate over the yogurt before freezing.
- Substitute the berries with your favorite fruits, such as sliced bananas or peaches, for a different flavor profile.
