Ingredients

  • 2 cups plain Greek yogurt
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1/2 cup chopped nuts (almonds, walnuts, or pecans)
  • 1/4 cup shredded coconut (optional)

Instructions

  1. In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until well blended and smooth.
  2. Line a baking sheet with parchment paper. Pour the yogurt mixture onto the prepared baking sheet and spread it evenly to about 1/2 inch thick.
  3. Sprinkle the mixed berries, chopped nuts, and shredded coconut (if using) evenly over the yogurt layer. Press the toppings gently into the yogurt to ensure they stick.
  4. Place the baking sheet in the freezer and freeze for at least 4 hours or until the yogurt is completely solid.
  5. Once frozen, remove the yogurt bark from the baking sheet and break it into pieces. Serve immediately or store in an airtight container in the freezer.
