Description
A delicious and healthy Garden Zucchini Casserole packed with fresh vegetables and cheeses.
Ingredients
- 2 medium zucchinis, sliced (about 4 cups)
- 1 medium onion, chopped
- 1 red bell pepper, chopped
- 2 cups fresh spinach, chopped
- 2 cloves garlic, minced
- 1 cup shredded mozzarella cheese
- 1 cup ricotta cheese
- 1 large egg
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup breadcrumbs
- 2 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat the oven to 375°F. Grease a 9×13-inch baking dish with cooking spray or olive oil.
- In a large skillet over medium heat, add olive oil. Sauté the onion and red bell pepper for about 5 minutes until softened. Add the garlic and cook for an additional minute until fragrant.
- Stir in the sliced zucchini and chopped spinach. Cook for about 5-7 minutes until the zucchini is tender. Remove from heat and let cool slightly.
- In a mixing bowl, combine the ricotta cheese, egg, Italian seasoning, salt, and black pepper. Mix until well combined.
- Add the sautéed vegetable mixture to the ricotta mixture and stir until evenly combined. Pour the mixture into the prepared baking dish.
- Sprinkle the shredded mozzarella cheese evenly over the top. In a small bowl, mix the breadcrumbs with the grated Parmesan cheese, then sprinkle this mixture over the mozzarella layer.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly. Let cool for 5-10 minutes before serving.
Notes
- For a creamier texture, substitute half of the mozzarella with additional ricotta.
- To add a protein boost, mix in cooked ground turkey or chicken to the vegetable mixture before baking.
