Description

Ingredients

  • 2 medium zucchinis, sliced (about 4 cups)
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 2 cups fresh spinach, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1 cup ricotta cheese
  • 1 large egg
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F. Grease a 9×13-inch baking dish with cooking spray or olive oil.
  2. In a large skillet over medium heat, add olive oil. Sauté the onion and red bell pepper for about 5 minutes until softened. Add the garlic and cook for an additional minute until fragrant.
  3. Stir in the sliced zucchini and chopped spinach. Cook for about 5-7 minutes until the zucchini is tender. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the ricotta cheese, egg, Italian seasoning, salt, and black pepper. Mix until well combined.
  5. Add the sautéed vegetable mixture to the ricotta mixture and stir until evenly combined. Pour the mixture into the prepared baking dish.
  6. Sprinkle the shredded mozzarella cheese evenly over the top. In a small bowl, mix the breadcrumbs with the grated Parmesan cheese, then sprinkle this mixture over the mozzarella layer.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly. Let cool for 5-10 minutes before serving.
