Ingredients

1½ pounds beef stew meat, cut into bite-sized pieces

1 pound baby potatoes, halved

4 tablespoons unsalted butter, melted

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon dried thyme

½ teaspoon dried rosemary

½ teaspoon salt (or to taste)

¼ teaspoon black pepper

¼ cup beef broth

1 tablespoon olive oil
Instructions

Sear the Beef:
Heat olive oil in a skillet over medium-high heat. Sear the beef bites for 2–3 minutes per side, until browned all over. Transfer to the slow cooker. -
Add the Potatoes:
Place halved baby potatoes into the slow cooker with the seared beef. -
Make Garlic Butter Sauce:
In a bowl, stir together melted butter, garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper. Pour the mixture over the beef and potatoes. -
Add Broth:
Pour the beef broth into the slow cooker for extra flavor and moisture. -
Cook Low and Slow:
Cover and cook:
– On LOW for 6–8 hours
– Or on HIGH for 3–4 hours
Until the beef is fork-tender and potatoes are soft.
