Description

This cozy, slow-cooked meal brings together melt-in-your-mouth garlic butter beef bites and tender baby potatoes for the ultimate bowl of comfort. Infused with herbs and spices, it’s rich, hearty, and effortlessly flavorful—perfect for a no-fuss dinner.


Ingredients

  • pounds beef stew meat, cut into bite-sized pieces

  • 1 pound baby potatoes, halved

  • 4 tablespoons unsalted butter, melted

  • 3 cloves garlic, minced

  • 1 teaspoon onion powder

  • 1 teaspoon smoked paprika

  • ½ teaspoon dried thyme

  • ½ teaspoon dried rosemary

  • ½ teaspoon salt (or to taste)

  • ¼ teaspoon black pepper

  • ¼ cup beef broth

  • 1 tablespoon olive oil


Instructions

  • Sear the Beef:
    Heat olive oil in a skillet over medium-high heat. Sear the beef bites for 2–3 minutes per side, until browned all over. Transfer to the slow cooker.

  • Add the Potatoes:
    Place halved baby potatoes into the slow cooker with the seared beef.

  • Make Garlic Butter Sauce:
    In a bowl, stir together melted butter, garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper. Pour the mixture over the beef and potatoes.

  • Add Broth:
    Pour the beef broth into the slow cooker for extra flavor and moisture.

  • Cook Low and Slow:
    Cover and cook:
    – On LOW for 6–8 hours
    – Or on HIGH for 3–4 hours
    Until the beef is fork-tender and potatoes are soft.

 

  • Serve:
    Garnish with fresh parsley if desired. Serve warm and enjoy!

Notes

  • For extra richness, add an extra tablespoon of butter before serving.

  • Yukon gold potatoes also work well in place of baby potatoes.

  • Store leftovers in an airtight container in the fridge for up to 3 days.

  • Reheat gently on the stovetop or in the microwave with a splash of broth to keep it moist.
