A quick and delicious recipe for Garlic Butter Chicken Bites with Asparagus, perfect for a weeknight dinner.
Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 pound asparagus, trimmed and cut into 2-inch pieces
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- In a large skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the chicken pieces to the skillet. Season with paprika, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through.
- Remove the chicken from the skillet and set aside. In the same skillet, add the remaining 2 tablespoons of butter and the asparagus. Sauté for about 4-5 minutes until the asparagus is tender but still crisp.
- Return the chicken to the skillet with the asparagus. Toss everything together to combine and heat through for an additional 2 minutes.
- Remove from heat and garnish with fresh parsley. Serve with lemon wedges on the side for an extra burst of flavor.
Notes
- For a spicy kick, add a pinch of red pepper flakes when cooking the chicken.
- Substitute the asparagus with broccoli or green beans for a different vegetable option.
