Ingredients
- 2 pounds sweet potatoes, peeled and cut into 1-inch cubes
- 4 tablespoons unsalted butter, melted
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine the melted butter, minced garlic, salt, black pepper, and paprika. Stir well to combine.
- Add the cubed sweet potatoes to the bowl and toss until they are evenly coated with the garlic butter mixture.
- Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and slightly caramelized, stirring halfway through for even cooking.
