A delicious and easy-to-make Garlic Butter Shrimp Scampi recipe that combines succulent shrimp with linguine in a flavorful garlic butter sauce.
Ingredients
- 1 pound large shrimp, peeled and deveined
- 8 ounces linguine or spaghetti
- 4 tablespoons unsalted butter
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup dry white wine (or chicken broth)
- Juice of 1 lemon
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
- Lemon wedges for serving
Instructions
- Cook the linguine according to package instructions in a large pot of salted boiling water. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
- In a large skillet, heat the butter and olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
- Add the shrimp to the skillet and season with salt and pepper. Cook for 2-3 minutes on each side until the shrimp are pink and opaque.
- Pour in the white wine (or chicken broth) and lemon juice, scraping up any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes.
- Toss the cooked pasta into the skillet with the shrimp, adding reserved pasta water as needed to create a light sauce. Stir in the chopped parsley.
- Serve immediately with lemon wedges on the side.

- For a creamier sauce, stir in 1/4 cup of heavy cream after adding the wine.
