Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 8 ounces linguine or spaghetti
  • 4 tablespoons unsalted butter
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine (or chicken broth)
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • Lemon wedges for serving

Instructions

  1. Cook the linguine according to package instructions in a large pot of salted boiling water. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
  2. In a large skillet, heat the butter and olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
  3. Add the shrimp to the skillet and season with salt and pepper. Cook for 2-3 minutes on each side until the shrimp are pink and opaque.
  4. Pour in the white wine (or chicken broth) and lemon juice, scraping up any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes.
  5. Toss the cooked pasta into the skillet with the shrimp, adding reserved pasta water as needed to create a light sauce. Stir in the chopped parsley.
  6. Serve immediately with lemon wedges on the side.
