Description
A delicious twist on a classic grilled cheese sandwich featuring sautéed zucchini and garlic butter.
Ingredients
- 2 medium zucchinis, sliced into 1/4-inch rounds
- 4 tablespoons unsalted butter, divided
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 8 slices of bread (your choice)
- 8 ounces shredded mozzarella cheese
- 4 ounces shredded cheddar cheese
- Fresh basil leaves, for garnish (optional)
Instructions
- In a skillet over medium heat, melt 2 tablespoons of butter. Add the sliced zucchini, minced garlic, Italian seasoning, salt, and pepper. Sauté for about 5-7 minutes, or until the zucchini is tender and slightly golden. Remove from heat and set aside.
- In a separate skillet or griddle, heat the remaining 2 tablespoons of butter over medium heat.
- Assemble the sandwiches by placing a slice of bread in the skillet, topping it with a layer of mozzarella cheese, a layer of sautéed zucchini, and a layer of cheddar cheese. Top with another slice of bread.
- Cook the sandwich for about 3-4 minutes on one side, or until golden brown. Carefully flip the sandwich and cook for an additional 3-4 minutes on the other side, until the cheese is melted and the bread is golden brown.
- Remove the sandwich from the skillet and repeat the process with the remaining ingredients.
- Slice the sandwiches in half and garnish with fresh basil leaves, if desired. Serve immediately.
Notes
- For a spicy kick, add sliced jalapeños or crushed red pepper flakes to the zucchini mixture.
- Substitute the mozzarella and cheddar with your favorite cheese, such as pepper jack or gouda, for a different flavor profile.
