Description

A delicious twist on a classic grilled cheese sandwich featuring sautéed zucchini and garlic butter.


Ingredients

  • 2 medium zucchinis, sliced into 1/4-inch rounds
  • 4 tablespoons unsalted butter, divided
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 8 slices of bread (your choice)
  • 8 ounces shredded mozzarella cheese
  • 4 ounces shredded cheddar cheese
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. In a skillet over medium heat, melt 2 tablespoons of butter. Add the sliced zucchini, minced garlic, Italian seasoning, salt, and pepper. Sauté for about 5-7 minutes, or until the zucchini is tender and slightly golden. Remove from heat and set aside.
  2. In a separate skillet or griddle, heat the remaining 2 tablespoons of butter over medium heat.
  3. Assemble the sandwiches by placing a slice of bread in the skillet, topping it with a layer of mozzarella cheese, a layer of sautéed zucchini, and a layer of cheddar cheese. Top with another slice of bread.
  4. Cook the sandwich for about 3-4 minutes on one side, or until golden brown. Carefully flip the sandwich and cook for an additional 3-4 minutes on the other side, until the cheese is melted and the bread is golden brown.
  5. Remove the sandwich from the skillet and repeat the process with the remaining ingredients.
  6. Slice the sandwiches in half and garnish with fresh basil leaves, if desired. Serve immediately.

  • For a spicy kick, add sliced jalapeños or crushed red pepper flakes to the zucchini mixture.
