Ingredients
- 2 cups cauliflower florets
- 8 ounces mushrooms, sliced
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the sliced mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until they are browned and tender.
- Stir in the cauliflower florets, thyme, salt, black pepper, and red pepper flakes (if using).
- Cover the skillet and cook for an additional 8-10 minutes, stirring occasionally, until the cauliflower is tender.
- Remove the lid and cook for another 2-3 minutes to allow any excess moisture to evaporate.
- Remove from heat and garnish with fresh parsley before serving.
Notes
- For added protein, consider tossing in some cooked chicken or tofu during the last few minutes of cooking.
- To enhance the flavor, squeeze fresh lemon juice over the dish just before serving.
