Description

These Garlic Grilled Shrimp Skewers are juicy, flavorful, and irresistibly easy to make. Marinated in olive oil, lemon, herbs, and garlic, then grilled to tender perfection, they’re the ultimate crowd-pleaser for summer cookouts or quick weeknight dinners.


Ingredients

  • 1 pound large shrimp, peeled and deveined (preferably jumbo)

  • 1/4 cup olive oil

  • 1/4 cup fresh cilantro, finely chopped

  • 1/4 cup fresh parsley, finely chopped

  • 4 cloves garlic, minced

  • 1 tablespoon lemon juice

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • Pinch of cayenne pepper (optional, adjust to taste)


Instructions

  • Prepare the Marinade:
    In a medium bowl, whisk together the olive oil, lemon juice, garlic, cilantro, parsley, salt, black pepper, and cayenne pepper.

  • Marinate the Shrimp:
    Place the shrimp in a separate bowl and pour in about 3/4 of the marinade. Toss well to coat all the shrimp evenly.
    Cover and refrigerate for at least 30 minutes, up to 1 hour. Do not exceed 2 hours to avoid changing the shrimp’s texture.

  • Assemble the Skewers:
    Thread the marinated shrimp onto skewers, packing them snugly but not too tight. Spoon any remaining herbs and garlic bits from the marinade over the shrimp.

  • Grill the Skewers:
    Preheat your grill or grill pan to medium-high heat.
    Grill the skewers for 2 to 3 minutes per side, or until the shrimp turn pink and opaque.

 

  • Serve and Finish:
    Remove the shrimp from the grill and drizzle with the reserved marinade (not the one used for raw shrimp). Serve hot with lemon wedges or over rice, salad, or tacos.

Notes

  • If using wooden skewers, soak them in water for at least 20 minutes before grilling to prevent burning.

  • To make this dish indoor-friendly, use a grill pan or broil the shrimp in the oven on high for 2–3 minutes per side.

  • For a citrusy kick, zest the lemon before juicing and add it to the marinade.

  • Delicious served with rice, pasta, or inside warm pita bread with a yogurt sauce.
