Ingredients
- 2 pounds baby potatoes, halved
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the halved baby potatoes, olive oil, minced garlic, rosemary, thyme, salt, black pepper, and paprika (if using). Toss until the potatoes are evenly coated.
- Spread the potatoes in a single layer on a baking sheet lined with parchment paper for easy cleanup.
- Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender, stirring halfway through for even cooking.
- Once done, remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
Notes
