Ingredients
- 2 cups broccoli florets
- 2 cups cauliflower florets
- 2 cups carrots, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine the broccoli, cauliflower, carrots, and bell peppers.
- In a small bowl, whisk together the olive oil, minced garlic, oregano, thyme, salt, and black pepper.
- Pour the olive oil mixture over the vegetables and toss until they are evenly coated.
- Spread the vegetables in a single layer on a large baking sheet.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the veggies are tender and slightly caramelized.
