Ingredients

Chicken & Marinade:

  • pounds boneless skinless chicken tenderloins

  • 1 cup buttermilk

  • 1 teaspoon kosher salt

  • ½ teaspoon ground black pepper

Crunchy Breading:

  • 1 cup all-purpose flour

  • 2 tablespoons cornstarch

  • 1 teaspoon kosher salt

  • ½ teaspoon garlic powder

  • 2 large eggs, room temperature

  • 1 tablespoon water

  • 2 cups plain panko breadcrumbs

  • 1 cup finely grated parmesan cheese

  • Vegetable oil (for frying)

Golden Garlic Butter:

  • ½ cup unsalted butter

  • 1 tablespoon minced garlic

  • ½ teaspoon kosher salt

  • 2 teaspoons chopped parsley


Instructions

  1. Marinate: In a large bowl, combine chicken, buttermilk, salt, and pepper. Refrigerate for at least 3 hours or overnight.

  2. Breading Prep: Arrange three dishes: flour mixed with cornstarch, salt, and garlic powder; eggs whisked with water; and panko breadcrumbs combined with parmesan cheese.

  3. Bread Chicken: Coat each tenderloin in flour mixture, dip into egg wash, then coat evenly with breadcrumb mixture. Place on parchment-lined tray.

  4. Fry: Heat oil to 350°F. Fry tenders in batches for 4-5 minutes until crispy and internal temperature reaches 165°F. Drain on paper towels.

  5. Garlic Butter Drizzle: Melt butter with garlic and salt in a saucepan over low heat. Stir in parsley. Drizzle over fried tenders.

Air Fryer Alternative: Cook at 400°F for 8 minutes, flipping halfway. Finish with garlic butter drizzle.
