  • 1 medium head of green cabbage

  • 1 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Remove the outer leaves of the cabbage and cut the head in half. Place the halves cut side down on a cutting board and slice them into 1-inch thick wedges.
  3. In a large bowl, whisk together the olive oil, minced garlic, salt, black pepper, and red pepper flakes if using.
  4. Arrange the cabbage wedges on a baking sheet lined with parchment paper. Brush the garlic oil mixture generously over each wedge, ensuring they are well coated.
  5. Roast in the preheated oven for 25-30 minutes, flipping the wedges halfway through, until the edges are crispy and the cabbage is tender.
  6. Remove the baking sheet from the oven and sprinkle the grated Parmesan cheese evenly over the cabbage wedges. Return to the oven and roast for an additional 5-7 minutes, or until the cheese is melted and bubbly.
