Garlic Parmesan Roasted Sweet Potatoes are irresistible!
Ingredients
- 2 large sweet potatoes, peeled and cut into 1-inch cubes
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the sweet potato cubes, olive oil, minced garlic, salt, black pepper, and paprika. Toss until the sweet potatoes are evenly coated.
- Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and golden brown, stirring halfway through for even cooking.
- Remove the baking sheet from the oven and sprinkle the grated Parmesan cheese over the sweet potatoes. Return to the oven and roast for an additional 5 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with fresh parsley before serving.
Notes
- For a spicy kick, add a pinch of cayenne pepper or red pepper flakes to the seasoning mix.
- Try substituting the Parmesan cheese with crumbled feta or goat cheese for a different flavor profile.
