Garlic Parmesan Roasted Sweet Potatoes are irresistible!


Ingredients

  • 2 large sweet potatoes, peeled and cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the sweet potato cubes, olive oil, minced garlic, salt, black pepper, and paprika. Toss until the sweet potatoes are evenly coated.
  3. Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and golden brown, stirring halfway through for even cooking.
  5. Remove the baking sheet from the oven and sprinkle the grated Parmesan cheese over the sweet potatoes. Return to the oven and roast for an additional 5 minutes, or until the cheese is melted and bubbly.
  6. Remove from the oven and garnish with fresh parsley before serving.
