Ingredients
- 2 medium zucchinis, sliced into 1/4-inch rounds
- 3 tablespoons olive oil
- 4 cloves garlic, minced

- 1/4 teaspoon black pepper
- 1/2 teaspoon Italian seasoning
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine the sliced zucchini, olive oil, minced garlic, salt, black pepper, and Italian seasoning. Toss until the zucchini is evenly coated.
- Spread the zucchini mixture in a single layer on a baking sheet lined with parchment paper.
- Sprinkle the grated Parmesan cheese evenly over the zucchini.
- Roast in the preheated oven for 15-20 minutes, or until the zucchini is tender and the cheese is golden brown.
- Remove from the oven and let cool for a few minutes. Garnish with chopped parsley if desired before serving.
