Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 8 ounces mushrooms, sliced
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 cup chicken broth
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced mushrooms and sauté for about 5 minutes until they are golden brown. Remove the mushrooms from the skillet and set aside.
  2. In the same skillet, add the remaining 2 tablespoons of olive oil. Season the chicken breasts with salt, black pepper, thyme, and paprika. Place the chicken in the skillet and cook for about 6-7 minutes on each side, or until the chicken is cooked through and has a nice golden color.
  3. Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant, being careful not to burn it.
  4. Pour in the chicken broth and return the sautéed mushrooms to the skillet. Let everything simmer for about 5 minutes, allowing the flavors to meld together.
  5. Remove from heat and garnish with fresh parsley before serving.
