A delicious and easy-to-make Garlic Pepper Chicken with Mushrooms recipe that is perfect for a weeknight dinner.
Ingredients
- 2 pounds boneless, skinless chicken breasts
- 8 ounces mushrooms, sliced
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1/2 cup chicken broth
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced mushrooms and sauté for about 5 minutes until they are golden brown. Remove the mushrooms from the skillet and set aside.
- In the same skillet, add the remaining 2 tablespoons of olive oil. Season the chicken breasts with salt, black pepper, thyme, and paprika. Place the chicken in the skillet and cook for about 6-7 minutes on each side, or until the chicken is cooked through and has a nice golden color.
- Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant, being careful not to burn it.
- Pour in the chicken broth and return the sautéed mushrooms to the skillet. Let everything simmer for about 5 minutes, allowing the flavors to meld together.
- Remove from heat and garnish with fresh parsley before serving.
Notes
- For a spicy kick, add a pinch of red pepper flakes when seasoning the chicken.
- Serve over rice or quinoa for a complete meal, or pair with a side of steamed vegetables for a lighter option.
