Description

A simple and delicious recipe for garlic roasted vegetables that are perfect as a side dish.


Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 2 cups carrots, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 medium red onion, cut into wedges
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large mixing bowl, combine the broccoli, cauliflower, carrots, bell peppers, and red onion.
  3. In a small bowl, whisk together the olive oil, minced garlic, thyme, rosemary, salt, and pepper.
  4. Pour the olive oil mixture over the vegetables and toss until they are evenly coated.
  5. Spread the vegetables in a single layer on a large baking sheet.
  6. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the vegetables are tender and slightly caramelized.
  7. Remove from the oven and let cool for a few minutes before garnishing with fresh parsley.

Notes

  • For added flavor, sprinkle some grated Parmesan cheese over the vegetables during the last 5 minutes of roasting.
