A quick and delicious recipe for stir-fried vegetables with garlic and sesame oil.
Ingredients
- 2 tablespoons sesame oil
- 4 cloves garlic, minced
- 1 inch fresh ginger, grated
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 cups broccoli florets
- 1 cup snap peas
- 1 cup carrots, julienned
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame seeds
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Heat the sesame oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
- Add the sliced red and yellow bell peppers, broccoli florets, snap peas, and julienned carrots to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
- Pour in the soy sauce and rice vinegar, stirring to combine. Cook for an additional 2 minutes.
- Season with salt and pepper to taste.
- Remove from heat and sprinkle with sesame seeds and chopped green onions before serving.
Notes
- For added protein, toss in some cooked chicken, shrimp, or tofu during the last few minutes of cooking.
- Experiment with different vegetables such as zucchini, mushrooms, or bok choy for a unique twist.
