Ingredients

  • 2 tablespoons sesame oil
  • 4 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 cups broccoli florets
  • 1 cup snap peas
  • 1 cup carrots, julienned
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Heat the sesame oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
  3. Add the sliced red and yellow bell peppers, broccoli florets, snap peas, and julienned carrots to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
  4. Pour in the soy sauce and rice vinegar, stirring to combine. Cook for an additional 2 minutes.
  5. Season with salt and pepper to taste.
  6. Remove from heat and sprinkle with sesame seeds and chopped green onions before serving.

Notes

  • For added protein, toss in some cooked chicken, shrimp, or tofu during the last few minutes of cooking.
