Ingredients
- 2 large cucumbers, thinly sliced
- 1 teaspoon salt
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon sugar
- 1 tablespoon sesame seeds
- 2 green onions, sliced
Instructions
- Place the sliced cucumbers in a colander and sprinkle with salt. Let them sit for about 15 minutes to draw out excess moisture. Rinse under cold water and pat dry with paper towels.
- In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, minced garlic, and sugar until well combined.
- In a large bowl, combine the cucumbers, dressing, sesame seeds, and green onions. Toss gently to coat the cucumbers evenly.
- Let the salad sit for at least 10 minutes before serving to allow the flavors to meld.
- Serve chilled or at room temperature.
