Description
A delicious and healthy side dish featuring roasted cauliflower and mushrooms, infused with garlic and herbs.
Ingredients
- 2 cups cauliflower florets
- 2 cups sliced mushrooms (button or cremini)
- 4 tablespoons olive oil
- 6 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the cauliflower florets and sliced mushrooms.
- In a small bowl, whisk together the olive oil, minced garlic, dried thyme, dried rosemary, salt, and black pepper.
- Pour the olive oil mixture over the cauliflower and mushrooms, tossing to coat evenly.
- Spread the vegetables in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the vegetables are golden brown and tender.
- Remove from the oven and sprinkle with fresh parsley before serving.
Notes
- For an extra kick, add a pinch of red pepper flakes to the olive oil mixture.
- Try substituting the cauliflower with broccoli or Brussels sprouts for a different flavor profile.
