Description

A delicious and healthy side dish featuring roasted cauliflower and mushrooms, infused with garlic and herbs.


Ingredients

  • 2 cups cauliflower florets
  • 2 cups sliced mushrooms (button or cremini)
  • 4 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the cauliflower florets and sliced mushrooms.
  3. In a small bowl, whisk together the olive oil, minced garlic, dried thyme, dried rosemary, salt, and black pepper.
  4. Pour the olive oil mixture over the cauliflower and mushrooms, tossing to coat evenly.
  5. Spread the vegetables in a single layer on a baking sheet lined with parchment paper.
  6. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the vegetables are golden brown and tender.
  7. Remove from the oven and sprinkle with fresh parsley before serving.
