Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup semi-sweet chocolate chips
- 1 cup sweetened shredded coconut
- 1 cup chopped pecans
- ½ cup sweetened condensed milk
Instructions
- Preheat the oven to 325°F (163°C).
- In a medium bowl, combine graham cracker crumbs and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in the granulated sugar and vanilla extract, mixing until well combined.
- Add the eggs one at a time, mixing well after each addition until fully incorporated.
- Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Allow to cool slightly, then mix into the cream cheese mixture until well combined.
- Stir in the shredded coconut and chopped pecans, reserving a small amount for topping if desired.
- Pour the cheesecake batter over the prepared crust in the springform pan. Smooth the top with a spatula.
- Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
- Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight.
- Before serving, drizzle the sweetened condensed milk over the top and sprinkle with reserved coconut and pecans if desired.
Notes
- For a richer flavor, add a tablespoon of coffee or espresso powder to the cream cheese mixture.
- Substitute the pecans with walnuts or almonds for a different nutty flavor.
