A deliciously unique German Chocolate Poke Cake that combines rich chocolate flavor with a creamy coconut and pecan topping.
Ingredients
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 ½ teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup unsweetened cocoa powder
- 1 cup buttermilk, room temperature
- ½ cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup sweetened shredded coconut
- 1 cup chopped pecans
- 1 cup sweetened condensed milk
- 1 cup chocolate frosting
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, salt, and cocoa powder. Whisk until well blended.
- Add the buttermilk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix on medium speed for about 2 minutes until smooth.
- Carefully stir in the boiling water until fully combined; the batter will be thin.
- Pour the batter into the prepared baking pan. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes.
- Using the handle of a wooden spoon or a fork, poke holes all over the top of the warm cake.
- In a separate bowl, mix the sweetened condensed milk, shredded coconut, and chopped pecans. Pour this mixture over the cake, ensuring it seeps into the holes.
- Let the cake cool completely, then frost with chocolate frosting.
- Serve chilled or at room temperature.
Notes
- For a richer flavor, try adding a teaspoon of espresso powder to the batter.
- If you prefer a lighter texture, substitute half of the all-purpose flour with cake flour.
