Ingredients
- 2 pounds bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh ginger, grated
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 lemon, juiced
- 1 cup chicken broth
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine olive oil, minced garlic, grated ginger, soy sauce, honey, salt, black pepper, paprika, dried thyme, and lemon juice. Mix well to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).
- In a large oven-safe skillet or baking dish, pour in the chicken broth. Place the marinated chicken thighs skin-side up in the skillet.
- Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy. The internal temperature should reach 165°F (75°C).
- Optional: For extra crispiness, broil the chicken for an additional 2-3 minutes at the end of baking.
- Remove from the oven and let rest for 5 minutes. Garnish with chopped parsley before serving.
Notes
- For a spicier kick, add 1 teaspoon of red pepper flakes to the marinade.
- Serve with steamed vegetables or over rice to create a complete meal.
- You can also substitute chicken thighs with chicken breasts if preferred, adjusting the cooking time as needed.
